Charred Squid
Ingredients:
- 90ml olive oil
- 3 tbsp red wine vinegar
- 2 kiwi fruits, juice & pulp
- 4 garlic cloves, finely chopped
- 4 springs fresh rosemary
- 12 sprigs fresh marjoram
- 12 squid, prepared for cooking
- 125gm plain flour
- 1 tbsp dried marjoram
Method:
To make the marinade, place the oil, vinegar, juice & pulp of the kiwi fruits, garlic & herb sprigs in a non metallic bowl. |
