Few sensations set the taste buds tingling like the wonderful aroma of outdoor cooking & the unique flavour of a barbequed meal.

Charred Squid

Ingredients:

  • 90ml olive oil
  • 3 tbsp red wine vinegar
  • 2 kiwi fruits, juice & pulp
  • 4 garlic cloves, finely chopped
  • 4 springs fresh rosemary
  • 12 sprigs fresh marjoram
  • 12 squid, prepared for cooking
  • 125gm plain flour
  • 1 tbsp dried marjoram

Method:

To make the marinade, place the oil, vinegar, juice & pulp of the kiwi fruits, garlic & herb sprigs in a non metallic bowl.

Rinse the squid, dry well & slice the sacs into 3 lengthwise. Add the squid (sacs & tentacles)to the marinade. Cover & leave to marinate in the refrigerator for at least 4 hours.
Remove the squid, wiping off & reserving as much of the marinade as possible. Dip each piece into the flour & dried marjoram.
Baste the squid with the marinade & grill on the barbequefor about 2 minutes each side, until browned. Serve immediately.

Cooks Tip: be very careful not to overcook the squid as it soon becomes tough.
